Wendy Kinney’s Salmon & Spuds (probably not exactly what she calls it!)
2 pounds potatoes, peeled, diced and boiled until soft
1/2 each green, yellow and red bell pepper, seeded and diced
1/2 pound smoked salmon
1/2 pound fresh salmon
salt & pepper to taste
In a large frying pan, saute the cooked potato until it starts getting nice and brown. Add the diced bell pepper and cook until the peppers are soft but still retain their color.
In a buttered casserole dish, add a third of the potato mixture and crumble the fresh salmon over it evenly. Add another third of the potato mixture and arrange the smoked salmon evenly over it. Then add the last of the potatoes, sprinkle with grated cheese if desired, and bake at 350 for 20 minutes.
