Vickie Sullivan’s Potato Sandwich
Four slices of white bread
1 baking potato, washed and peeled
Butter the four slices of bread and lay them, butter side up, on two plates. Slice the potato into thin slices and fry in butter until browned and slightly crispy. Remove the hot potato slices from the pan and arrange them on one of the slices of bread on each plate, and place the other slice, butter side in, on top. The potatoes will melt the butter on the two sandwiches, making them even more butter-licious. Eat while hot and make more as needed. Vickie says she could eat three of these when she was a young girl!
