Happiness Recipe – Write On!!

Everyone has at least one book in them, so the saying goes. June and Sandy have each written a book and are working on more, but their guest has definitely over-achieved!

Roasted Poblano and Corn with Chile Lime Aioli

Adapted from the Ritz Carlton Spa in Tucson by Pamela Fagan Hutchins

5 ears of corn
3 T avocado or olive oil
1 onion, chopped
1 T garlic, minced
3 poblano pepers, chopped
1 T lemon juice
1 t salt
1 t pepper
1 T smoked paprika
4 T butter
1 c crumbled cojita cheese

Aioli ingredients:
1/2 cup mayonnaise
1 T chili powder
1 t cayenne pepper
1 lime, juiced

Shuck and roast 5 ears of corn on broil, close to the burner. Saute onion and garlic over med-hi in oil, add poblano, lemon juice, salt, pepper, smoked paprika. Reduce heat. When corn is lightly browned, remove it from ear and add to saute with butter. Return heat to med-hi. Sprinkle cojita over mixture. Mix aoili ingredients.

Serve corn/poblano mixture with tortilla chips and aioli or as a side dish.

This one’s pretty simple, because it’s just an assembly process followed by a run in the oven to get everything warm.

Take leftover dressing/stuffing and press it down tightly into the bottom of a pie plate to form a “crust.” Lay slices of turkey on it, cover the turkey with leftover green veggies (whatever you have – broccoli casserole, green bean casserole, roasted Brussels sprouts – whatever) and pour leftover gravy over that. Carefully press leftover mashed potatoes over the top, forming a top “crust.” Sprinkle with Parmesan cheese and bake in a 350 degree oven until everything is warm. Enjoy!
