One of Shari’s favorite foods today is a childhood favorite – Egg Bake. She remembers it as a special casserole that her mom made when company was coming, on holiday mornings and sometimes “just because. Now she shares it with her family as their special Christmas morning breakfast. That recipe reminded Sandy of her own Egg Thing, which never actually got a name, but gets rave reviews each time she makes it. Both recipes are included below…enjoy!
Shari Yantes’ Egg Bake
2 Cups Shredded Cheddar Cheese
1 Can Cream of Mushroom Soup
2 Rolls of Sausage (Jimmy Dean Original works great)
2/3 cup Half & Half
Preheat oven to 350
Fry sausage with salt & pepper to taste
sprinkle 1 cup of cheese in bottom of a 9×13 baking pan (make sure you spray or butter the bottom and sides of the pan!)
Scramble the eggs and the pour them over the cheese
Sprinkle sausage over eggs
Mix the soup and cream together and then pour the mixture over the sausage
Sprinkle the rest of the cheese on top
(you can prepare ahead of time – I usually put it together the night before and toss it in the oven as soon as I get up)
Bake 1 hour UNCOVERED at 350.
Sandy Weaver Carman’s Egg Thing
3 flour tortillas
2 C shredded cheese – I like the Mexican blend, but use whatever you like
1 C ham, diced or 4 to 6 thin slices of ham
1 T dried onion flakes
Salt and pepper to taste
Preheat oven to 350. Whisk eggs, onion, salt and pepper together. In a square baking pan sprayed with cooking spray, pour a small amount of the egg mixture in the bottom, then lay 1 tortilla in the pan. Sprinkle in 1/3 of the cheese and ham, lay 1 tortilla over that, pour half of the remaining egg mixture over it, and repeat. Top with extra cheese if you’d like, and bake uncovered for 12-15 minutes or until there’s no jiggle when you shake the pan. Eat hot or cold – yum!
