In this episode of Happiness Recipe, June Cline and Sandy Weaver Carman chat with Elizabeth Crook, who works with people to raise the yippee quotient in their lives.

As the creator of the Yippee Index, Elizabeth shows people how to do things they’ve never done before and how to lead the life of their dreams. Along the way, she’s done a few amazing things that she shares with us, as well as sharing tips and tricks for discovering your own yippee. And her recipe is a big yippee, especially if you’re watching what goes in so it doesn’t go on – a spin on cole slaw that you’ll make over and over again!

Elizabeth’s Simple & Delicious Slaw

1 red pepper, minced
1 small onion, minced
Cilantro, minced
Olive oil
Sesame oil
Rice wine vinegar
Sesame seeds

Mix the cole slaw, red pepper, onion and cilantro in a bowl. In another small bowl, mix olive oil, sesame oil and rice wine vinegar together, adjusting amounts to suit your taste. Pour over slaw, toss, sprinkle sesame seeds over, and enjoy!
